I HAD TO SHARE THIS!


Sorry this is a short-on-pictures post!  But this was something I was burning to share with you!  Read on...

During the holidays, we received a delicious box of the juice-is-dripping-down-your-chin type of pears and they came with a wonderful salad dressing recipe that I just had to share--it is one of the top TWO salad dressings I've ever made.

For the dressing:
¼ cup Champagne vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
½ teaspoon sea salt
1 teaspoon freshly ground pepper
¾ cup walnut oil
Whisk together the first five ingredients.  Gradually whisk in the walnut oil.

For the salad:
1 head butter or other lettuce, wash and dried
2 pears, peeled, cored and sliced
2/3 cup blue cheese
2/3 cup candied nuts or toasted walnuts
Gently tear the lettuce into bite-sized pieces.  Arrange on four chilled plate Place fans of pear slices on lettuce.  Crumble blue cheese evenly on top.  Drizzle the dressing generously over the salad.  Sprinkle with nuts and serve immediately.  

I didn't have blue cheese for the salads, but I did have feta and used it.  I also substituted toasted pecans for the candied nuts--all without sacrificing anything.

Today I accidentally added the leftover salad dressing to a pot of split pea soup!  It added a little tang and was delicious!

  6. Hi Robin, this sounds so yummy. I have a salad recipe very similar but the dressing you used is very unique. I love candied nuts and feta in my salads. Made one for lunch yesterday with a group of friends. I will be trying this. Thanks so much for sharing with Share Your Cup. The painting looks fun. Is it a painting class?
